  • 3 Tbsp margarine or butter
  • 3 Tbsp all purpose flour
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 1/2 cups milk
  • 6 cups thinly sliced potatoes (about 6 medium)
  • 1 small oinion, finely chopped (about 1/4 cup)
  • 1 1/2 cups cubed fully cooked smoked ham
  • 1 Tbsp margarine or butter

Step 1

Heat oven to 350. Grease 2 qt casserole. Heat 3 Tbsp margarine or 1 1/2 qt saucepan over low heat until melted. Stir in flour, salt and pepper. Cook over low heat, stirring constantly, until smooth and bubbly; remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. layer 1/3 of the potatoes, 1/2 of the onion and ham and 1/3 of the white sauce in caserole; repeat. Top with remaining potatoes and white sauce. Dot with 1 Tbsp magarine. Cover and bake 30 minutes. Uncover and bake 60 to 70 minutes or until potatoes are tender. Let stand 5 to 10 minuttes before serving.

MICROWAVE DIRECTIONS: Place 3 Tbsp margarine, the flour, salt and pper in 4 cup microwave measure. Microwave on high 2 minutes, stirring about 1 minute, until very bubbly. Gradually stir in milk. Microwave 5 to 6 minutes, stirring with fork or wire whisk every 2 minutes, until thickened. Layer as directed - except use ungreased 3 qt casserole. Omit 1 Tbsp margarine. Cover tightly and microwave on medium high (70%) 21 to 25 minutes, stirring every 6 minutes, until potatoes are tender. Let stand covered 5 minutes.
