  • 3/4 cup white whole-wheat flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup flaxseed meal
  • 2 tablespoons turbinado sugar
  • 1 teaspoon espresso powder
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon fine sea salt
  • 3/4 cup honey
  • 1/2 cup extra-light olive oil
  • 1 teaspoon vanilla extract
  • 2 egg whites
  • 2 tablespoons water
  • Fresh raspberries, for garnish (optional)

Step 1

Preheat the oven to 350 degrees. Lightly oil an 8 or 9-inch square baking pan.

In a large bowl, whisk together the flour, cocoa, flaxseed meal, sugar, espresso powder, baking powder, baking soda, and salt.

Add the honey, oil, vanilla, egg whites and water. Stir until just combined. Do not overmix.

Scrape the batter into the prepared pan. Bake until a wooden pick inserted in the center comes out clean, 15 to 18 minutes.

Let cool in the pan on a wire rack. Cut into 16 squares. Set aside any you are planning to serve right away. Spread the remainder out on a baking sheet and freeze. When frozen solid, pack into an airtight freezer container.
