Ingredients
- Cookie Bottom

- 1/2 cup butter
- 1/2 cup light brown sugar
- 1 cup flour
- 1/16 tsp salt
- Prunes Top

- 1 1/4 cup dried prunes
- 1/8 tsp salt
- 1 tbs grated orange peel
- 2 tbs cornstarch
- 1/4 cup orange juice
- 1 cup chopped walnuts
- 1/3 cup light brown sugar
- 2 eggs
- 1 can (3 1/2 oz) flaked coconut

Step 1
Cookie bottom
Cream sugar, butter and eggs until fluffy. Then add the rest of cookie ingredients. Pat dough evenly into the bottom of a 9x9 pan.
Bake at 350° 10-12 minutes, then let cool 15 min.
Prune Top
Put prunes in a pan, cover with water and heat over medium for 30 minutes until plump. Keep 2 tbs of liquid for later, and drain the rest.
Remove pits if there are any. add the 2 tbs liquid to the salt, orange peel, orange juice, cornstarch, and plumped prunes to a sauce pan and simmer for a few minutes until thickened. Stir in walnuts and spread over cookie bottom. In a separate bowl beat eggs and stir in coconut then pour over prune mixture.
Bake at 350° for 25 minutes.
