Shrimp Baked in Tomatoes with Parmesan 0 Picture

Ingredients

  • 1/4 cup olive oil
  • 1/2 cup finely chopped onion
  • 2 garlic cloves, minced
  • 1 1/2 pounds medium shrimp
  • 1/2 cup finely diced tomato, drained on a paper towel
  • 2/3 cup shredded Parmesan cheese
  • 1/2 cup cream (optional)
  • 1/4 cup chopped fresh parsley

Preparation

Step 1

1. Preheat oven to 400 degrees.

2. In a large skillet, heat oil and saute onion over medium heat for 5 minutes.

3. Add garlic and saute for 30 seconds.

4. Add shrimp and saute for 2 minutes.

5. Add tomato and salt to taste and cook for 2 minutes or until sauce begins to thicken.

6. Transfer to a baking dish or 6 individual ramakins.

7. Bake for 10 minutes, or until sauce is bubbly.

8. Sprinkle with the cheese and bake for 2 to 3 minutes more.

9. Sprinkle with parsley and serve.
