- 2 (8oz) boneless chicken breasts
- 3/4 tsp kosher salt
- 2 broccoli stems
- 2 Tbsp olive oil
- 2 Tbsp lemon juice
- 1/4 tsp ground black pepper
- 3 cups thinly sliced brussel sprouts(about 12)
- 2 celery stalks, thinly sliced
- 1/4 cup toasted hazelnuts
- 1/4 cup fresh parsley
- 1 oz Parmesan cheese

Prep: 15 minutes 4 servings
1. Boil chicken in water with 1/2 tsp salt. Drain and shred into bite size pieces
2. Use a vegetable peeler to remove outer layer of broccoli stem; dicard and contine peeling stems into long strips.
3. Whisk together oil, lemon juice,and 1/4 tsp salt and pepper
4. Add broccoli strips, brussels sprouts, celery, hazelnuts, parsley and chicken.
5. Toss and divide into 4 bowls
6. Top with Parmesan cheese
