Ingredients
- Cake:
- 2 cups flour
- 2 cup sugar
- 1 tsp baking soda
- 1 tsp salt
- 4 eggs
- 2 tsp vanilla
- 1 1/2 veggie oil
- 4 tsp cinnamon
- 1 cup pecans , chopped
- 3 cup shredded raw carrots
- Icing:
- 1/2 cup butter
- 6 oz cream cheese
- 1 package powder sugar
- 1/2 cup pecans
- 2 tsp vanilla
- 1 cup coconut

Preparation
Step 1
Cake:
Preheat oven to 375 degrees.
Grease and flour pan.
Sift together flour, sugar, baking soda, salt and cinnamon. Set aside
Mix eggs, vanilla, oil, pecans and carrots. Add flour mixture.
Bake 45 minutes to 1 hour.
Icing:
Blend butter and cream cheese. Add powder sugar pecans, vanilla and coconut.
