- 4 oz whole wheat capellini
- 3 oz dry packed sun dried tomatoes
- 1 1/2 TBSP olive oil
- 8 oz chickn breast cut into bite size pieces
- 1/8 tsp salt
- 3 cloves garlic minced
- 1/2 tsp red pepper flakes
- 1/4 cup sliced fresh basil
- 1/2 cup toasted pine nuts

Step 1
1. prepare pasta
2. Soak tomatoes in hot water 10 minutes or until soft; reserve 1/2 cup water
3. Heat oil and cook chicken, garlic, and red pepper flakes.
4. Stir in tomatoes and reserved water and cook 2-3 minutes until chicken is completely cooked
5. Drain pasta and toss with basil and tomatoes
6. Sprinkle with pine nuts
