  • 2 English cucumbers (about 1 lb each)
  • 1 medium red onion, halved and thinly sliced.
  • 1/3 cup reduced fat mayo
  • 2 Tbsp reduced fat sour cream
  • 2 Tbsp cider vinegar
  • 1 Tbsp honey
  • 1 tsp poppy seeds
  • 1/2 tsp coarse salt
  • 1/4 tsp ground pepper

Halve 2 English cucumbers (about 1 lb each) lengthwise. Using a teaspoon, scrap out seeds, slice cucumbers very thinly on the diagonal. In a medium bowl, combine cucumbers with 1 medium red onion, halved and thinly sliced. In a small bowl, stir together 1/3 cup reduced fat mayo, 2 Tbsp each reduced fat sour cream and cider vinegar, 1 Tbsp honey, 1 tsp poppy seeds, 1/2 tsp coarse salt, and 1/4 tsp ground pepper. Add to cucumber mixture; toss, and serve immediately.
