Ingredients
- 4 6 oz chicken cutlets
- 1/2 tsp salt
- 1/4 tsp pepper
- 6 olive oil packed anchovies
- 2 Tbsp olive oil
- 1 Tbsp anchovy oil
- 1 Tbsp minced garlic
- 1 (15 oz) can crushed tomato
- 1/2 cup chopped, pitted, black, kalamata olives
- 3 Tbsp capers, 1/4 tsp crushed red pepper flakes
- Chopped parsley garnish

Preparation
Step 1
Toss chicken, cut into 1/2 inch pieces, w/ salt and pepper. Chop anchovies. In a large nonstick skillet, heat olive oil and anchovy oil over Medium heat. Saute chicken and anchovies until chicken turns white, approx 3 min, add garlic, tomatoes, olives, capers, red pepper. Cook until sauce thickens and chicken is cooked through, approx. 5 min. Garnish with chopped parsley.
