Ingredients

  • 2 cups flour (sifted)
  • 3 eggs
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 stick room temp butter
  • 1 cup sugar
  • 1 oz Anise
  • 1 cut course chopped almonds

Preparation

Step 1

Roast Almonds at 350 F 8-10 minutes - let cool

Mix the flour, baking powder, salt and almonds and set aside

Mix the butter, sugar, anise and eggs (note: add eggs last and one at a time)

Add the flour mixture to the butter mixture. Knead the resulting dough. Use light dusting of flour on kneading board. Try to minimize excess flour into the dough.

Make a log - 14 inches long by 3-4 inches wide

Place log on cookie sheet with parchment paper - bake at 350F for 20-25 minutes (or until golden brown). Remove and let cool for a few minutes

Cut (using serrated knife) log at an angle and place cut cookies on cookie (with parchment paper) and bake at 350F for 10 minutes. Turn and bake for an additional 10 minutes.

Let cool on cooling rack.
