Ingredients
- 36 unbaked tart shells
- 3 eggs beaten
- 2 c homogenized milk
- 1/4 tsp pepper
- 1/4 tsp Tabasco
- Filling 1
- 3/4 lb blue cheese
- 24 slices bacon, crisp and finely chopp0ed
- 5 tbsp fresh thyme
- Filling 2
- 1-3/4 c finely minced fennel
- 1/2 lb old Cheddar, grated
- pepper
- Filling 3
- 2/3 cu finely diced, drained sun-dried tomatoes
- 4-5 tbsp minced capers
- 1-1/4 c crumbled chevre
- 1 oz basil, finely chopped
- Filling 4
- 1-1/4 c finely chopped BBQ salmon tips
- 1 cu finely chopped spinach
- 8 tsp grated lemon peel
- 5 small green onions, minced
- black pepper

Preparation
Step 1
Each filling makes 36 tarts. Custard mixtures makes 36 tarts
Place a tbsp of filling ine ach tart shell.
Pour the custard mixture over to fill each tart.
Bake 25 minutes at 375 deg F
