Ingredients

  • 5 lbs oxtails (lean)
  • Oil for browning
  • 4 cloves of garlic
  • 1 chopped onion
  • 1 bay leaf
  • 1 cup celery
  • 1 cup dry red wine
  • 1 cup beef stock
  • 1 can tomatoes
  • carrots
  • salt and pepper

Preparation

Step 1

Brown oxtails in oil in a large dutch oven. (cast iron)
Add all ingredients and cook at 325 for a couple of hours.
Put carrots in at the end. Cook the night before and let stand in frig to get the fat off.
NOTE: Cooking oxtails is like cooking stew; except they take longer. Tell butcher not to give you oxtails with a lot fat, get lean.
