Ingredients
- 1 lb chestnuts
- 3/4 lb sausage (pork) fry and drain
- 1/4 cup minced onion (1 or 2 whole onion)
- 1 stick butter
- 4 cups bread crumbs
- 1 cup hot water or broth
- 1 tsp sage
- 1 1/2 salt or to taste
- 1/8 tsp pepper

Step 1
Chop chestnuts in blender if purchased at William-Sonoma. If fresh split shell on both sides and bake at 500 degrees for 15 minutes. Peel them when hot (shell comes off easier) Chop till fine.
Cook sausage and drain, set aside. Cook onions in butter, add bread and other seasonings in a large bowl, add 1 cup hot water and mix well with chestnuts. Taste stuffing and add more seasoning to taste.
