Ingredients
- 1 cup. all-purpose flour
- 1 cup. whole-wheat flour
- 1/4 cup. toasted wheat germ
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 1/3 cups. mashed ripe banana ( about 3 large )
- 2/3 cup. sugar
- 1/4 cup. vegetable oil
- 1 large egg, lightly beaten

Preparation
Step 1
Preheat oven to 350*.
Combine first 6 ingredients in a large bowl, and make a well in center of mixture. Combine banana, sugar, oil and egg; add to flour mixture, stirring just until moist.
Divide batter evenly among 16 muffin cups coated with cooking spray.
Bake at 350* for 20 mins. Remove from pans immediately, and cool to wire rack.

Variation:
Whole-Wheat Banana Loaf
Preheat oven to 400*. Prepare batter as directed.
Place batter in 9 x 5-inch loaf pan coated with cooking spray. Bake for 40 mins. or until the wooden pick come out clean.
