Ingredients

  • 1 1/2 pounds skinless boneless chicken breasts, cut into 1 1/2 inch pieces
  • 1 (8 ounce) can whole water chestnuts, rinsed and drained
  • 1 bunch scallions, chopped (1 cup)
  • 1 1/4 teaspoon salt
  • 2 teaspoons oil

Preparation

Step 1

1. Pulse chicken in a food processor until coarsely chopped and transfer to a large bowl.

2. Add water chestnuts and scallions to processor and pulse until finely chopped.

3. Add to the chicken along with the salt and pepper.

4. Stir with your hands until just combined. Form 18 (2 inch) patties or size of your choice.

5. Heat 1 teaspoon oil in a 12-inch nonstick skillet over moderate heat until hot, but not smoking.

6. Transfer the patties to the skillet and saute until golden and cooked through.
