- Shortcake:
- 2 C all purpose flour
- 2 Tbl sugar
- 1 Tbl baking powder
- 1/2 tsp salt
- 1/2 C butter
- 1 egg, beaten
- 2/3 C light cream
- Strawberries
- Whipped cream

Step 1
Preheat oven to 450 degrees.
In mixing bowl, stir together flour, sugar, baking powder and salt. cut in butter until mixture resembles coarse crumbs. Coming the egg and light cream, add all at once to flour mixture, stirring with a fork just to moisten.
Spread dough in greased 8 x 1.5-inch round baking pan or 8-inch square baking pan, builging up edges slightly. Bake for 15-18 minutes or until done. Remove from pan and cool slightly, about 5 minutes.
To assemble, cut shortcake in half horizontally. Place bottom layer on serving plate, cover with berries and whipped cream. Place top of shortcake on top. Spoon remaining berries and cream on top. Serve while cake is still warm.
