Ingredients
- Rub:
- pork rib chops (don't use pork that's been enhanced with brine)
- 2 quarts water
- 1/2 cup table salt or 1 cup kosher salt
- 3 tbsp. paprika
- 2 tsp. cumen
- 1 tbsp. brown sugar
- 1 tsp. coriander
- Sauce:
- liquid smoke
- spice rub (see above - add half to sauce)
- mustard
- brown sugar
- tomato sauce
- worcestershire sauce
- Salt and pepper to taste.

Step 1
Brine chops for 30 minutes. Pat dry. Slit the edges of the chops to prevent curling.
Rub half the spice rub on the chops. Fry chops for 8 minutes. Add sauce. Cook for another 1-2 minutes.
