Ingredients

  • Rub:
  • pork rib chops (don't use pork that's been enhanced with brine)
  • 2 quarts water
  • 1/2 cup table salt or 1 cup kosher salt
  • 3 tbsp. paprika
  • 2 tsp. cumen
  • 1 tbsp. brown sugar
  • 1 tsp. coriander
  • Sauce:
  • liquid smoke
  • spice rub (see above - add half to sauce)
  • mustard
  • brown sugar
  • tomato sauce
  • worcestershire sauce
  • Salt and pepper to taste.

Preparation

Step 1

Brine chops for 30 minutes. Pat dry. Slit the edges of the chops to prevent curling.

Rub half the spice rub on the chops. Fry chops for 8 minutes. Add sauce. Cook for another 1-2 minutes.
