Ingredients

  • 1 tablespoon garlic powder
  • 2 teaspoons ground cumin
  • 2 teaspoons hot paprika
  • 2 teaspoons dried oregano
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon ground red pepper
  • 1 (2-pound) flank steak, trimmed
  • Cooking spray

Preparation

Step 1

Combine first 7 ingredients; rub spice mixture over both sides of steak. Cover and refrigerate 3 hours.

Place steak on grill rack coated with cooking spray; grill 5 minutes on each side or until desired degree of doneness. Let stand 10 minutes. Cut steak diagonally across the grain into thin slices.

Prep: 10 min., Stand: 30 min. While storing in refrigerator, keep your guacamole from changing color by placing layer of plastic wrap directly on the surface of the mixture.

Prep: 30 min., Bake: 55 min., Cool: 45 min., Chill: 2 hr. Baking potato shells before filling them sets shape (so they will not break when picked up) and enhances flavor. Don't overmix texture will be gummy instead of creamy. Petite indicates a potato about the size of plum tomato.
