Ingredients

  • 2 pounds Roma tomatoes, cored and diced small
  • 1/2 cup tomato juice
  • 1 small jalapeno, seeded and minced (use seeds for hotter salsa)
  • 1 medium red or maui onion, diced small
  • 1 garlic clove minced
  • 1/2 cup chopped cilantro
  • 1/4-1/2 cup fresh lime juice
  • Salt to taste

Preparation

Step 1

Mix all ingredients in glass bowl. Refrigerate in an airtight container to allow flavors to blend.

I suggest about 2 hours in the fridge before serving
