Ingredients
- 1 1/2 c. Shreds of wheat bran cereal (All-Bran)
- 3/4 c. Unsweetened applesauce
- 1/2 c. Nonfat buttermilk
- 1/4 c. Firmly packed brown sugar
- 1/4 c. Frzn egg substitute, thawed
- 2 Tbsp. Vegetable oil
- 1 1/4 c. All-purpose flour
- 2 tsp Baking pwdr
- 1/4 tsp Salt
- 1/2 tsp Grnd cinnamon
- 1/4- 3/4 c. Raisins
- Vegetable cooking spray

Preparation
Step 1
Combine first 3 ingredients; let stand 5 min.
Add in brown sugar, egg substitute, and oil; stir well.
Combine flour, baking pwdr, salt, and cinnamon; make a well in center of mix. Add in cereal mix, stirring just till dry ingredients are moistened. Fold in raisins.
Spoon batter into muffin pans coated with cooking spray, filling three-fourths full.
Bake at 400 for 20 min or possibly till lightly browned. Remove from pan immediately; cool on wire racks.
