Ingredients

  • 1-3/4 c. water
  • 2/3 c. Uncle Ben's coverted rice
  • 1-1/4 c. sugar snap peas or snow peas
  • 1-1/4 c. sliced mushrooms
  • 1 c. cherry tomatoes
  • 1/3 c. Italian dressing
  • 1/4 c. grated Parmesan cheese

Preparation

Step 1

In a medium saucepan, bring the water and rice to a boil. Cover, reduce heat, and simmer 20 minutes, or until just tender. While rice steams, stem the peas and slice into 1/2" lengths. Combine peas, mushrooms, tomatoes, dressing and cheese in a large bowl. Rinse cooked rice under cold water to cool; drain well. Add to vegetable mixture and toss to coat with dressing. Serve immediately, or chill until ready to serve.
