Ingredients
- use unsalted butter for cookies
- Line pans with parchment paper. Slide parchment with cookies onto wire racks for cooling
- Bake all cookies at 325 using convection oven (just about 1/2 the time so watch carefully)
- Use thin rimless cookie sheets (not insulated)
- keep a pizza stone in oven to equalize the heat
- Use shortening for soft cookies
- Brown sugar also produces soft cookie
- Butter produces a crispier cookie because the butter melts faster than shortening
