This is delicious and easy to make. I use a “Salad Shooter” to grate the cauliflower, but you can do it with a handheld grater or use a mandolin and finely chop any slices.
This dish can also be made with chicken if you prefer – just brown up the chicken (sliced into thin strips) first then follow the recipe.
In a large frying pan sprayed with olive oil or other
nonstick
spray, brown 1/2 lb. ground turkey with some diced onion and grated
ginger. When the turkey is nearly done, deglaze the pan with a slosh of
chicken boullion, then add in a cup of raw coleslaw mix (shredded
cabbage & carrots). Cook for a few minutes then push to edges of
pan. Add another spritz of oil and 1/2 head shredded cauliflower to the
pan – cook another couple of minutes then push this as well to the
edges of the pan. Then one more spritz of olive oil (maybe not needed
if you are cooking on a nonstick pan instead of a stainless steel
skillet), then pour in 2 beaten eggs or 3 egg whites – cook up in the
center of pan then fold all ingredients together. Serve with ribbons of
sliced fresh baby spinach and a sliced apple.
