Watermelon Feta Salad

Ingredients
- 2 pounds watermelon, cut into 1-inch cubes
- Handful of mint, roughly chopped
- 10 kalamata olives, pitted and halved
- Small red onion, diced (about 2 Tbl)
- Juice of 1/2 lime
- 7 ounces feta
- 1/2 tsp sea salt
- Pepper
- additional mint for serving

Preparation
Step 1
Put all but feta in large bowl and toss gently so watermelon pieces stay whole.
Refrigerate for one hour. Before serving, add feta, a lttle more mint and cracked pepper.
