Cheese and Walnut Stuffed Peppers

Ingredients
- 6 large green peppers
- 4 medium onions, chopped
- Margarine
- 2 cups brown rice, cooked
- 1 cup walnuts, finely chopped or run through a meat or nut grinder
- 1/2 pound Cheddar cheese, grated
- 4 eggs, beaten
- Sea salt

Preparation
Step 1
Preheat oven to 350 F.
Remove stem caps, pulp and seeds from peppers. Stir-fry onions in margarine. Place in a large bowl and mix in remaining ingredients. Stuff each pepper as full as possible. Arrange peppers open-end up in a baking dish and pour a little water into the dish. Bake for 30 to 40 minutes or until peppers are tender. (If you have any extra filling, bake it separately in a small oiled casserole for a side dish or save it for a main dish for another day).
