Easy Rice Pilaf

This easy rice pilaf recipe is a delicious side dish! It goes great with chicken or lamb! It is definitely one of my favorites to serve to my family and friends.

Ingredients
- 1 1/2 cups long grain or converted white rice, uncooked
- 2 cups chicken broth or stock
- 3/4 cup onion, finely chopped
- 2 cloves garlic, finely chopped
- 1 1/2 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper

Preparation
Step 1
1. In a large saucepan, saute onion in olive oil until soft and a light golden color.
2. Add chicken stock or broth and bring to a boil.
3. Stir in rice, salt and pepper, cover, and reduce heat.
4. Simmer on low heat for twenty minutes.
5. Remove from heat and let sit, covered for 3-5 minutes. Fluff with fork and serve immediately.
