  • 4 boneless, skinless chicken breast halves (about 1 pound)
  • 1/4 cup bread crumbs
  • 2 Tbsp grated Parmesan cheese
  • 1/4 tsp dried oregano leaves
  • 1/8 tsp garlic salt
  • 1/8 tsp pepper
  • 1/4 cup Dijon mustard

Step 1

Heat oven to 350. Spray broiler pan rack with nonstick cooking spray. Trim fat from chicken. Mix bread crumbs, cheese, oregano, garlic salt and pepper. Spread mustard on chicken, coating all sides. Coat chicken with bread crumb mixture. Place on rack in broiler pan. Bake uncovered about 1 1/4 hours or until juice of chicken is no longer pink when centers of thickest pieces are cut.
