Ingredients
- 2 Tbsp. butter
- 1 sm. Leek, white part only, julienned
- white pepper
- 2 oz. brandy
- 1/2 pint heavy whipping cream
- 1/4 lb smoked salmon, sliced very thin
- 1 sm. Jar black lumpfish caviar
- 1 lb. fettucine
Preparation
Step 1
Saute leeks in butter for 30 seconds. Add pinch of white pepper. Deglaze w/brandy. Burn off alcohol. Add cream & reduce until creamy. Throw in salmon pieces just to warm.
Cook fettucine in salted water. Drain, add to sauce & mix.
Add caviar on top of each plate.
