Ingredients

  • 2 medium zucchini – trimmed
  • 1 bunch asparagus – trimmed
  • 1/4 cup EVOO
  • 2 tbsp fresh lemon juice
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 oz Pecorino Romano cheese in a chunk

Preparation

Step 1

Using a vegetable peeler, shave the zucchini in long thin strips. Thinly slice the asparagus on a diagonal. Put sliced veggies in a bowl and mix together.


In a small bowl, combine the EVOO, lemon juice, salt & pepper. Mix well and drizzle over the veggies. Using the vegetable peeler, shave the pecorino over the salad & serve immediately.
