Ingredients
- 2 medium zucchini – trimmed
- 1 bunch asparagus – trimmed
- 1/4 cup EVOO
- 2 tbsp fresh lemon juice
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 oz Pecorino Romano cheese in a chunk

Preparation
Step 1
Using a vegetable peeler, shave the zucchini in long thin strips. Thinly slice the asparagus on a diagonal. Put sliced veggies in a bowl and mix together.
In a small bowl, combine the EVOO, lemon juice, salt & pepper. Mix well and drizzle over the veggies. Using the vegetable peeler, shave the pecorino over the salad & serve immediately.
