Ingredients
- 4 oz of Jamon Serrano, Chopped
- 1 Onion, Chopped fine
- Flour, 2 scoops
- Milk, 2 cups
- Salt - 2 tsp
- Nutmeg - freshly grated, generous amount
- Egg
- Panko Breadcrumbs
- oil for cooking

Preparation
Step 1
1. Sweat onions over medium heat. add salt
2. Add 2 scoops flour. toast a bit.
3. add 1/2 Cup Milk. Stir & cook. add 1/2 cup milk.
4. Add Jamon
5. Taste. Adjust Salt.
6. Cook. Put in glass bowl, let rest overnight.
7. Beat egg in bowl. put panko in separate bowl.
8. heat oil.
9. form by Tbs full.
10. Dip in egg. roll in panko.
11. Form into Croquettes.
12. Fry, brown on all sides until golden brown.
