Ingredients

  • 3 cups all-purpose flour
  • 1 1/2 cups sugar
  • 3 1/2 teaspoons baking powder
  • 1 t salt
  • 1 t allspice
  • 3/4 cup butter or margarine
  • 1 1/2 t. caraway seeds
  • 1 1/4 cups currants
  • 2 cups mashed potatoes
  • 4 eggs well beaten

Step 1

Preheat to 375F. Grease pan well. In large bowl combine dry ingredients. Cut in butter until mixture is crumbly. Mix in seeds and currants. Add potatoes and mix thoroughly. Add eggs and blend well. Spoon batter into prepared pan. Bake 45-55 mins. Cool 10 mins before turning out on wire rack. Best if served while still warm.
