  • 1 roll (16.5 oz) Pillsbury™ refrigerated peppermint sugar cookies
  • 8 scoops (1/4 cup each) ice cream (whatever flavor you like)
  • Assorted candy sprinkles
  • Hard round peppermint candies, unwrapped, crushed, if desired

Unwrap cookie dough; cut into 16 slices with sharp knife. Bake and cool as directed on wrapper.

Step 2
On each of 8 cookies, top sides down, place ice cream. Top ice cream with remaining cookies, top sides up; press together slightly.

In shallow bowl, place sprinkles. Gently press side of ice cream sandwiches in sprinkles; wrap individually in plastic wrap or cooking parchment paper. Freeze until ready to serve.

To make these Peppermint Ice Cream Sandwiches even more elegant, dip half of each sandwich in melted white vanilla baking chips or dark chocolate chips. In small bowl, microwave chips and 1 teaspoon vegetable oil uncovered on High 1 minute; stir. Microwave 1 to 2 minutes longer, stirring every 30 seconds, until melted and smooth. Dip sandwiches, coating half of each. Freeze until ready to serve.
