  • 2-3 ounces cream cheese, softened
  • 1 egg
  • 1/3 cup sugar
  • 1/8 teaspoon salt
  • 1 6 oz. package chocolate pieces
  • 1-1/2 cups sifted flour
  • 1 cup sugar
  • 1/4 cup cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup water
  • 1/3 cup cooking oil
  • 1 tablespoon vinegar
  • 1 teaspoon vanilla
  • 2 tablespoons sugar
  • 1/2 cup chopped walnuts

Step 1

Beat cream cheese in bowl until smooth, using mixer. Add egg, 1/3 cup sugar and 1/8 teaspoon salt. Beat until blended. Stir in chocolate pieces, set aside. Sift together flour, 1 cup sugar, cocoa, baking soda and 1/2 teaspoon salt into mixing bowl. Combine water, oil, vinegar and vanilla in another bowl, mix well. Add oil mixture to dry ingredients. Beat with electric mixer until well blended. Spoon batter into paper lined muffin cups filling 1/3 full. Top each with a heaping teaspoonful of cream cheese mixture. Combine 2 tablespoons sugar and walnuts in bowl, mix well. Sprinkle each with 1 teaspoon of the sugar-walnut mixture. Bake in 350 degree oven 35 minutes.
