Ingredients

2 C. Vanilla Ice Cream, slightly softened
1 C. Peanuts, chopped & divided
30 Chocolate Chip Cookies

Preparation

Step 1

Mix ice cream & 1/2 C. of the peanuts. Freeze 20-30 min. or till firm enough to hold its shape. Spoon about 2 Tbsp. of the mixture onto bottom side of each of 15 of the cookies; cover with second cookie, top side up, to make a total of 15 sandwiches. Roll edges in remaining 1/2 C. peanuts. Freeze 1-2 hrs. or till firm. Serve.
