  • 1-2 cans pumpkin puree
  • 1 TBSP oil
  • 1/2 yellow onion diced
  • 1 lb ground beef
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 3 cups fresh spinach finely chopped
  • 1 cup basil finely chopped
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp grated ginger
  • 3 egg whites

Preparation

Step 1

Preheat oven to 350
Heat oil in a large skillet and cook onion till it is soft
Add ground beef and cook till browned
Add garlic, salt and pepper. Mix well
Add the spinach and basil stir well and remove from heat
Spread the meat mixture into a 11x7 glass baking dish
Mix the pumpkin, cinnamon, nutmeg and ginger in a bowl
In a large mixing bowl beat the egg whites until they are still
Fold in the pumpkin mixture and spread the pumpkin on the top of the meat mixture
Bake uncovered for 30 minutes
