Ingredients
- sauce:
- 2 eggplants, sliced lengthwise
- 1/2 cup shortening
- 2 tablespoons butter
- 4 medium onions sliced
- 3 cloves garlic
- 1 lb. hamburger meat
- 1 teaspoon salt
- 1/2 teaspoon thyme
- 1/2 teaspoon oregano
- 1/2 cup canned tomatoes
- 1/2 cup white wine
- 2 egg whites
- 1/2 cup bread crumbs
- 2 tablespoons flour
- 2 tablespoons butter
- 1-1/2 cups milk
- 1/2 teaspoon salt
- 2 egg yolks
- 1/4 teaspoon nutmeg
- 4 teaspoons grated Parmesan cheese

Step 1
Slice eggplants in 1/2" thick slices. Sprinkle lightly with salt and set aside on paper towels to absorv moisture for 20 minutes. Fry eggplants in shortening until brown on both sides. Transfer to platter until needed. Add more butter in skillet, toss in sliced onions and finely chopped garlic. Cook just until limp. Stir in ground meat, salt, thyme, oregano, tomatoes and wine, cover and cook slowly for 30 minutes. Cook, mix in unbeaten egg whites and half the crumbs.
sauce: Stir flour into melted butter in saucepan, add milk and salt. Cook over low heat stirring constantly until sauce is smooth and thick, Beat egg yolks slightly, add a little of the hot sauce gradually. Stir egg mixture into remaining sauce,. Season with nutmeg. Grease a large baking dish, cover bottom of dish with remaining crumbs. Arrange a layer of eggplant and a layer of meat mixture on crumbs. Repeat with layers of eggplant and meat, put sauce on top. Sprinkle with cheese. Bake at 350 degrees for 1 hour.
