Stuffed Meatloaf

Ingredients
- 2 lbs ground beef
- 2 eggs
- 1 medium onion, chopped
- 2 c Italian bread crumbs
- 2 cloves of garlic, chopped
- salt and pepper to taste
- 16 oz ricotta cheese
- a couple of pinches of dried basil
- 1 (16 oz) can diced tomatoes

Preparation
Step 1
Mix the first five ingredients together in a bowl and mold into a loaf, set aside 1/4 cup of breadcrumbs.
Scoop out the center of the loaf and set aside.
In a separate bowl, mix ricotta, basil, salt and pepper to taste, then fill the hole with this mixture. Replace scooped out meat, covering the cheese mixture.
Top with some of the juice from the tomatoes and pour the rest of the tomatoes around the loaf.
Bake at 350º for 45 minutes. Sprinkle some bread crumbs over the top and bake for another 15 minutes until golden brown.
