CHORIPAN SHRIMP ROLLS

Ingredients
- 2 lb large cooked shrimp, roughly chopped.
- 10 ounce chorizo, cooked and cooled
- 1 1/2 cups fresh parsley
- 1 1/2 cups fresh cilantro
- 2 T fresh oregano leaves
- 1 small shallot, roughly chopped
- 2 cloves garlic mined
- 1/2 cup extra virgin olive oil
- 2 1/2 T lime juice
- 1/2 t crushed red pepper
- 1/2 cup mayonnaise
- 3 8 inch hoagie rolls

Step 1
Mix shrimp and chorizo in a bowl. Put parsley, cilantro, oregano, shallot and garlic in food processor and process until finely chopped. Add olive oil, lime juice, red pepper and 2 t salt and process until combined. Add 1/2 cup of mixture to shrimp/chorizo and toss to coat. Stir together remaining mixture and mayonnaise in a small bowl. Spread mayo mixture on grilled rolls and fill with shrimp/chorizo mixture.
