Ingredients

  • 2 whole Red Bell Peppers
  • 2 Tablespoons Butter
  • 1/2 whole Large Onion, Diced
  • 2 cloves Garlic, Minced
  • 4 ounces, weight Cream Cheese
  • 3 Tablespoons Mayonnaise
  • Salt And Pepper, to taste

Preparation

Step 1

Place red peppers on to a baking sheet and place under a hot broiler. Rotate the peppers as they char. Remove from the oven, place into a large bowl and cover with plastic wrap.

In a skillet over medium heat, melt the butter. Saute onions 5 minutes. Season with salt and pepper and then stir in garlic for another minute. Remove from the heat and set aside.

Remove peppers from the bowl and peel the blackened skin off completely. Cut peppers into chunks, removing the stem and seeds.
Place peppers, onions, garlic, cream cheese and mayonnaise into a food processor and puree. Stir in salt and pepper to taste, pour into a bowl and refrigerate until ready to serve.
Serve with vegetables, crackers or slices of bread.
