Ingredients

  • Streusel Topping:
  • 2 1/2 cups  all-purpose flour
  • 2/3 cup  sugar
  • 1/4 cup  firmly packed light brown sugar
  • 1 teaspoons  baking soda
  • 1 teaspoon  ground cinnamon
  • 1/2 teaspoon  salt
  • 1 large egg, lightly beaten
  • 1 egg white, lightly beaten
  • 1/3 cup  butter, melted
  • 1 cup  nonfat buttermilk
  • 1 1/2 cups  thinly sliced fresh strawberries
  • 1 1/4 tsp. vanilla
  • 1 1/2 Tbs. sugar
  • 1/2 cup. Pecans, chopped
  • 1/2 . cup. light brown sugar
  • 1/4 cup. flour
  • 1 tsp. cinnamon
  • 2 Tbs. butter, melted
  • Glaze:
  • 1/2 cup. powdered sugar
  • 1 Tbs. water

Preparation

Step 1

Combine flour, 2/3 c. sugar, baking soda, cinnamon,and salt in a large bowl. Add strawberries, stir well, and make a well in center of mixture.

Stir together egg, butter, and buttermilk, and vanilla in a separate bowl. Add to flour mixture, stirring just until moistened. Spoon batter into paper-lined muffin pans, filling three-fourths full. Sprinkle each muffin with 1 tablespoon Streusel Topping.

Bake at 375° for 25 minutes or until muffins are golden brown and spring back when lightly touched in the center. Cool muffins in pans 10 minutes; remove from pans, and let cool completely on a wire rack. Drizzle Glaze.
