Skinny Chunky Monkey Cookies

Like with any vegan cookie recipe, you have to mix the ingredients properly. I soak the oats in a 1/4 of almond milk while I prepare the rest of the batter. Mash the Bananas first, then the p.b., vanilla, applesauce, stir. I add a 1/2tsp of baking powder (recipe does not call for it but its a must) to this step. Then the cocoa powder and lastly, the oats. You may also want to add a couple drops of liquid stevia if you are using raw cacao powder or if you want a sweeter cookie. Mix well and let sit. I soak a 1/4 of currants in water while that sits and then fold in to the batter once it has rested. I hope this helps everyone !

- 1/4 cup cocoa powder
- 1/3 cup unsweetened applesauce

Step 1
Preheat oven to 350 degrees.
Mash bananas and add rest of ingredients and stir and let sit for 20 minutes. Drop by teaspoonful onto ungreased cookie sheet. Bake for 10-12 minutes.
