Ingredients

  • 1 single pie crust
  • 2 slices cooked crumbled bacon (reserve 1 tablespoon drippings)
  • 3 tablespoons chopped onion
  • 1 minced garlic clove
  • 1/4 cup chopped zucchini
  • 1/4 cup chopped fresh mushrooms
  • 1 egg
  • 1/3 cup half and half
  • salt and pepper to taste
  • 3 to 4 drops hot pepper sauce
  • 1/3 cup shredded cheddar cheese

Step 1

Using pie cutter for bottom crust, cut 8 circles from pie crust. Press into cupcake make to make pie shells.

Cook onion and garlic in reserved bacon drippings for 4 to 5 minutes, stirring occasionally, until onion is tender. Remove from heat. Stir zucchini and mushrooms into onion mixture.

Whisk together egg and half and half in a medium mixing bowl. Stir in onion-zucchini mixture. Crumble bacon and add to egg mxiture. Stir in salt, pepper, hot sauce and cheese.

Spoon about 2 tablespoons filling into each cup. Bake in cupcake maker for 9 to 10 minutes or until knife inserted in center comes out clean.
