Ingredients
- Crust:
- Must prepare ahead
- 1 1/4 cups graham cracker crumbs
- 3 tbsp. sugar
- 3 tbsp. unsweetened cocoa
- 1/3 cup butter, melted
- Cheese Layer:
- 12 oz. cream cheese, softened
- 3/4 cup sugar
- 2 eggs
- 1 tbsp. vailla extract
- 1 tbsp. kahlua (sub. something)
- 8 oz. sour cream
- 1-2 oz. semi-sweet chocolate, grated
- Chocolate Layer:
- 1 1/2 tsp. instant coffee
- 2 tbsp. boiling water
- 4 oz. semi-sweet chocolate
- 4 eggs, separated
- 1/3 cup sugar
- 1/2 tsp. vanilla extract
- 2 tbsp. rum, divided (sub. something)
- Topping:
- 1 cup heavy cream
- shaved chocolate

Step 1
Preheat oven 350 degrees. Combine crumbs, sugar and cocoa in 9 inch pie plate; add butter and stir until well coated. Press mixture into bottom and sides of pan. Bake 8 minutes. Cool slightly.
In large mixing bowl or food processor, cream the cheese and sugar until light and fluffy; add eggs, one at a time, and continue beating until well mixed. Stir in vanilla and Kahlua. Pour mixture into pie crust. Bake 30 minutes. Cool exactly 10 minutes. Spread sour cream evenly over baked cheese layer. Sprinkle on grated chocolate . Refrigerate.
Dissolve coffee in boiling water. Add chocolate and melt, stirring until smooth. In small bowl, beat egg yolks until thick and lemon colored; gradually add sugar and continue beating until light yellow. Stir in chocolate mixture, vanilla and 1 tbsp. rum until well mixed. Beat egg whites into chocolate mixture. Gently fold chocolate mixture into remaining egg whites. Refrigerate mixture until cheese layer is chilled. Evenly spread chocolate mixture over cheese layer; chill.
To serve, whip cream; fold in 1 tbsp. rum. Spread over chocolate layer. Sprinkle with shaved chocolate.
