  • SALAD
  • chicken breast halves
  • 1/4 cup terriyaki marinade
  • 8 cups romaine and leaf lettuce
  • 1/2 cup cilantro
  • 1-1/2 cups grated jack cheese
  • 1-1/2 cups toasted tortilla strips
  • 1-1/2 cups diced seeded tomatoes
  • BEAN RELISH
  • 1 can black beans, rinsed
  • 1 can corn
  • 1/4 cup each chopped red pepper, green pepper, red onion
  • 1-1/2 tablespoons lime juice
  • 3/4 teaspoon oil
  • 1/8 teaspoon salt
  • LIME DRESSING
  • 1/4 teaspoon lime zest
  • 1 tablespoon lime juice
  • 1/2 tablespoon snipped cilantro
  • 1/8 teaspoon salt
  • 1 clove garlic, crushed
  • 1/4 cup olive oil
  • PEANUT BUTTER DRESSING
  • 1 clove garlic, crushed
  • 1/2 tablespoon brown sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon hot chili oil
  • 3/4 tablespoon red wine vinegar
  • 1-1/2 tablespoon chunky peanut butter
  • 1-1/2 tablespoon sesame oil

Preparation

Step 1

SALAD
Marinate chicken 1 hour in terryaki marinade. Broil and baste chicken approximately 15 minutes; cool, then cut into bite size pieces or shred. Tear greens; add cilantro, Dress with lime dressing.

Fill 6 plates with greens, top each with chicken, 1/8 cup of cheese, tomatoes, 1/4 cup bean relish. Drizzle with peanut dressing. Garnish with tortilla strips.

LIME DRESSING
Put in food processor or blender and blen until thick.

BLACK BEAN RELISH
Mix all ingredients together.

PEANUT BUTTER DRESSING
Process until well blended.

At the Cheesecake Factory they also put some quacamole on the salad and some salsa.
