Ingredients

  • 1 Tbsp olive oil
  • 1/2 cup orzo pasta
  • 1 cup white rice (not instant)
  • 2 1/2 cup chicken broth
  • 4 roma tomatoes, finely chopped
  • 1 small red onion, finely chopped
  • 1 jalapeno pepper, finely chopped, seeded
  • handful cilantro, finely chopped
  • 1 lime, zested and juiced
  • salt

Preparation

Step 1

Heat olive oil in sauce pot over medium heat. Add orzo and toast until golden. Stir in rice and broth, bring to boil. Reduce heat to low, cover, and simmer for about 20 minutes. In small bowl, combine tomatoes, onion, jalapeno, cilantro, lime zest, and lime juice. Season with salt to taste. When rice is cooked, fluff with fork and stir in tomato salsa. Serve and enjoy
