Spiced Apple Loaf

Ingredients
- 1 tsp. margarine
- 1 cup. finely chopped peeled, Granny Smith Apples
- 2 Tbs. brown sugar
- 2 cups. flour
- 1 1/2 tsp. baking powder
- 1 tsp. ground cinnamon
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 3/4 cup. nonfat buttermilk
- 1/2 cup. sugar
- 1/2 cup. applesauce
- 1/4 cup. vegetable oil
- 1 tsp. vanilla
- 2 egg whites
- 1 egg
- cooking spray
- 2 tsp. flour

Step 1
Preheat oven to 450*.
Melt margarine in a small nonstick skillet over med.- high
heat. Add apples and brown sugar, saute' until apple is
deep golden and caramelized. Remove from heat.
Combine 2 cup flour and the next 4 ingredients in large bowl; stir well, and make a well in center.
Combine the buttermilk and the next 6 ingredients and stir well with a wire whisk. Stir in apple mixture. Add to flour mixture, stirring just until dry ingredients are moistened.
Coat a 8 1/2" x 4 1/2" loaf pan with cooking spray; lightly dusting with 2 tsp. flour. Pour batter in pan.
Place in oven and reduce heat to 350*, and bake for
1 hour and 5 mins. or until wooden pick comes out clean.
Let cool in pan for 10 mins. on a wire rack, remove from pan, and let cool on a wire rack.
