Ingredients
- 3/4 c. breadcrumbs
- 2/3 c. macadamia nuts, chopped
- 1/4 t . salt
- 2 boneless, skinless chicken breasts, flattened to 1/4-inch thickness
- 1 egg, beaten
- 2 T. butter
- 2 T. olive oil

Preparation
Step 1
Combine bread crumbs, macadamia nuts and salt together on plate; set aside. Dip chicken in egg; coat with bread crumb mixture. Brown both sides in butter and oil in a skillet over medium-high heat; reduce heat to low and cover. Cook until juices run clear when chicken is pierced with a fork, about 5 to 7 minutes.
