Preparation

Step 1

Shape into a disk, wrap and refrigerate until firm (at least 1 hour).

Adjust oven racks to divide oven into thirds, heat oven to 350 degrees. Spray 2 large baking sheets with nonstick spray. Set a large cooling rack over a sheet of wax paper.

On a lightly floured surface roll the dough to 1/4 inch thick. Using 2 1/2 inch cookie cutter (shaped if desired) to cut out cookies, rerolling scraps to make a total of 28 cookies.

Place cookies 1/2 inch apart on the baking sheets using a spatula.

Bake, switching the baking sheets between the racks halfway through the cooking time, until the cookies are lightly browned on edges. (12-15 minutes).

To make frosting: combine all ingredients except colored sugar (if using) in a bowl. Use a spoon to drizzle frosting over cookies and sprinkle with colored sugar. Let stand 20 minutes until frosting is set.
