Ingredients

  • 2 garlic cloves
  • 2 cups (500ml.) frsh basil leaves
  • 1 cup (250ml.) crumbles feta cheese
  • 2 tbsp. (30ml.) olive oil
  • 1 small loaf whole wheat or focaccia
  • 8 - 10 thin slices deli cooked ham

Step 1

Coarsely chop garlic. Place in a food processor. Add basil and feta. Pulse until chopped. Then with motor running, slowly pour in oil. Continue pulsing until evenly mixed.

Slice loaf in half horizontally. Spread pesto mixture on both halves. Overlap slices of ham on bottom bread half. Cover with top half of bread. Gently press down. Wrap tightly in plastic. Sandwich will keepwell, refigerated, up to 4 hours. Cut into small sandwiches. Spread will keep well, covered and refrigerated, up to 2 days.
