Ingredients
- 2 lbs red potatoes, diced
- 1 1/4 cups green onions, chopped
- 1 teaspoon basil, chopped
- 2 Tablespoon oil
- 1/2 teaspoon salt
- pepper
- 2 ounces blue cheese

Preparation
Step 1
1. Layer Potatoes, 1 cup onions, basil, 1 tbs of oil, salt, and pepper in a crockpot.
2. Cover and cook 7 hours on low or 4 hours on high
3. Gently stir in cheese and remaining oil.
4. Cook an extra 5 minutes on high
5. Top with Green Onions and serve
